A thread of Indian cuisine that you must try at least once in your lifetime:
Panipuri:

what's the point if you haven't tried this? The more tangier and spicier the better.
Biryani (Hyderabadi/Lucknowi):

This doesn't need an explanation. 😌
Kulfi:

A dairy dessert, similar to ice cream, topped with spices like saffron, pistacchio, cardamom
Bhetki paturi:

A Bengali cuisine made with bhetki fish fillets steamed with ground mustard, ground coconut shavings and chillis wrapped in banana leaf
Dosa:

A South Indian dish, like a crispy thin pancake made with ground rice, stuffed with curry (also comes without it), served with a variety of South Indian dips
Gulab Jamun:

The king of desserts (according to me) contrary to popular beliefs doesn't swim in oil but in a very light sugary syrup. Tastes better hot.
Pav bhaji:

A street food snack from Mumbai/Maharashtra, it consists of butter toasted buns served with a side of yummy curry, garnished with onions/lime/chillis/coriander with a dash of butter.
Chole bhature:

Punjabi cuisine, consists of bhatura (a deep fried bread) served with chickpea curry.
Prawn Malaikari:

Another bengali cuisine, made with prawn in coconut milk and spices, generally served with plain rice
Momos:

Technically a Nepali/Tibetan dish, but also a Northeastern Indian delicacy, similar to dumplings served with spicy chutney. Steamed or fried, momos are always lipsmacking.
Jalebi:

Technically originated from Persians, it's considered one of Indian sweet delicacies. It's a spiral crunchy desert dipped in sugar syrup.
Butter chicken:

This originated as an experiment by a chef using leftover tomato gravy in 1947 (the more you know!) It's very easy to make and delicious. Generally served with naan bread.
Dhokla:

A Gujarati delicacy, it's made from gram flour, looks like these perfect little appetizing squares, topped with coconut sprinkles green chillies, mustard seeds and served with lipsmacking chutneys.
