So, even though we have a lot of the base files of the game. There is actually a lot of empty information within the leaked files themselves.

The first major discoveries were made by veteran modder @xdanieldzd. Using one of his older display list viewing tools, he was able to decompile and view some of the unused maps. More info about some of those specifically in the next tweet.
Some important models of note were the findings of an early versions of what is presumed to be Ganons castle. During one of the earliest time's in OOT's development, the game was originally suppose to play like Mario 64 where you would enter dungeons via Ganons castle.
The next big map that was found was an earlier version of Kokiri Forest. Thanks to uses Dr.Disco, Zel and @Zeldaboy14
We were able to recover the map and get it working in game.
Zel had also found some textures that were for the model.

Early versions of the spider houses and beneath the well/redead rooms from Majoras Mask are present in the DD files found by @SageOfMirrors and @xdanieldzd as well.
Likely meaning they were initially made for MasterQuest/DD URA EXPANSION but then used for MM later on.

It looks like MQ/URA was originally going to have its own version of a boss rush mode. There are multiple alternate versions of dungeon rooms that would have you play through smaller versions of the dungeons that then lead directly to a boss. Found by @Psi_Hate I believe.

A large handful of new never before seen pre-rendered maps and skybox textures have also been found. Unseen angle Outside the Temple Of Time, TOT Garden, Shops and an even an unknown area. Possibly an early version of the TOT known as "The Hall Of Time"
This screenshot is the closes thing we got to the last image. It seems to possibly be an even earlier version of it.

Things have seem to have slowndown a bit for the time being on major things. Bunch of little textures and name implications but from what I can tell their isn't anything else groundbreaking for the time being. (Give people time im sure they'll fine more.)

Take this with a grain of salt, but this file was found within Mario Kart 64's files and people are thinking that it might be a remnant of the OOT Alpha town.
However, it is missing a lot of key landmarks in the model but it is a possibility that can't be completely ruled out atm
